These rice crispy squares are super easy to make and put a savoury spin on a familiar sweet treat. Arctic Furikake is made with wakame, ume (plum) sesame seeds, and puffed rice, so it fits right in with the crispy cereal, adding a little saltiness and a tangy plum note that balances the sweetness of the marshmallow. The sesame seeds add a light nuttiness and extra crunch. It is a simple way to introduce seaweed into everyday snacks, great for Halloween parties and lunchboxes, and just as enjoyable for grown ups as for kids.
Instructions
- Melt the butter in a saucepan over a medium heat. Keep cooking until it foams and turns a light golden brown with a nutty smell, watching closely so it does not burn.
- Turn the heat to low, then add the marshmallows and vanilla extract. Stir until fully melted and smooth. It may seem as if it will not come together at first, but keep stirring until the mixture is glossy, then take it off the heat.
- Add one third of the rice krispies along with the Arctic Furikake and mix well. Add the rest of the cereal in two more batches, folding gently each time until everything is evenly coated.
- Transfer the mixture to a tray lined with baking paper, or lightly greased with a neutral oil, and press it down firmly into an even layer.
- Sprinkle the remaining 1 tsp of Arctic Furikake over the top and press it in lightly.
- Leave to set at room temperature for around 15 minutes, then slice into squares, or cut out Halloween shapes with cookie cutters.
- Store in an airtight container.
