Bakt torsk med hvitvinsaus

If you’re looking for traditional Norwegian comfort food, look no further than this baked cod with creamy white wine sauce! This dish is seasoned with Lofoten Seaweed’s Fish u0026amp; Seafood spice blend – a fresh and zesty blend of dill, lemon, garlic and winged kelp. With seaweed infused in both the fish itself and the accompanying sauce, you can be sure that every element of this meal is bursting with flavour and nutrition. Pink pickled onions give a pop of colour and acidity, and lend overall balance to the meal. Fish and seaweed are a match made in heaven; their flavour profiles are naturally complimentary, and both really shine in this rich, satisfying dish. If you don’t like cod or don’t have it to hand, any white fish will do, just make sure to adjust the cooking time to achieve the perfect result.
Makes 4 portions

Ingredients:

80g shallots, finely diced
100ml dry white wine
150g double cream
25g unsalted butter, cubed
1 tbsp neutral oil
Fish u0026 Seafood spice blend
600g of cod, bones and skin removed
3 tbsp olive oil
A pinch of Arctic Ocean Greens

Directions:

Preheat the oven to 180°C. Coat with olive oil, then divide into four roughly equal portions.

Put the fillets on a baking paper-lined tray. Season the fillets with Fish u0026amp; Seafood spice blend. Set aside for 10 – 15 minutes to allow the flavours to infuse.

Meanwhile, make the white wine sauce. Heat the neutral oil in a large frying pan, then add the diced shallots and sweat over a low heat until soft. Season with Fish u0026amp; Seafood spice blend and cook for a further few minutes, until fragrant. Add the white wine and simmer over a medium heat until the volume has reduced by half. Add the cream and simmer for a further five minutes. Remove from the heat, add the cubes of cold butter, and whisk until incorporated.

Bake the cod fillets for 10 – 12 minutes until just cooked. Arrange over four plates, spoon over a generous drizzle of the sauce, top with pink pickled onions and finish with a pinch of Arctic Ocean Greens.
