Seaweed Pesto

Pesto recipe
Pesto – originally from the Italian city of Genoa – is a sauce made from crushed garlic, pine nuts, basil leaves, salt, parmesan cheese and olive oil. Blended into a smooth paste or chopped roughly for more texture, it’s a powerfully aromatic mix of flavours that complements pasta and potato dishes. We’ve adapted the original recipe to include goat cheese and Arctic Ocean Greens; a blend of winged kelp and dulse flakes. These flavours bring a Nordic twist to an Italian favourite – and you could take that one step further by coating our seaweed tagliatelle with your seaweed pesto for a delicious fusion dish that takes less than 30 minutes to make.
This recipe makes about 4 servings.
Cooking time: 10 minutes

Ingredients:

25g fresh basil
10g Arctic Ocean Greens
15g pine nuts
75g olive oil
50g hard goat cheese, grated
2 pinches of salt
1 small clove of garlic
1 squeeze of lemon

Directions:

Place all ingredients in a blender and mix into a paste.
