Oven-Roasted Potato Wedges with Smoked Seaweed Salt

Potatoes go with everything, and with a sprinkle of smoked seaweed flakes, they get a brand-new twist! The mix of smoky depth and saltiness lifts the potatoes from everyday fare to festive food, perfect as a side for meat and fish, barbecue dishes, tapas, or simply on their own with a creamy aioli.

Crispy on the outside, soft on the inside – these are potatoes you’ll want to make again and again.

Serves 4
25 mins, easy to make

Ingredients:

• 1 kg potatoes
• 75 ml olive oil
• Juice of ½ lemon
• 2–3 tbsp butter
• 2-3 tsp Smoked Seaweed Salt
• Freshly ground black pepper

Directions:

Preheat the oven to 225 °C (435 °F).

Wash the potatoes well and cut them into wedges.

Place the potatoes in an ovenproof dish or roasting tray. Drizzle with oil and lemon juice. Season with Smoked Seaweed Salt and pepper, and toss well.

Dot the butter over the potatoes in small pieces.

Roast in the oven for about 20 minutes, until golden and tender. For extra crispiness: switch to fan setting for the last five minutes.
