Crispy Nori Chips

Using whole leaf nori in its natural form, these crispy bites celebrate the texture and flavour of seaweed just as it is found along the shore. Quickly fried, the leaves become light and delicate, with a clean, mineral taste of the ocean. Naturally rich in iodine and containing vitamin B12, they offer a simple, plant based way to enjoy seaweed.
Instructions:
- Pour the oil into a deep saucepan or fryer and heat to 180°C. Take care when working with hot oil and never leave it unattended.
- Break the dried whole leaf nori into small, bite sized pieces.
- Carefully lower a few pieces into the hot oil. Fry for around 10–20 seconds, until they become crisp and lightly puffed.
- Remove using a slotted spoon and transfer to a plate lined with paper towel to absorb excess oil.
- Continue frying in small batches, avoiding overcrowding the pan.
- Serve immediately while crisp.
